All of the information about toast levels and the taste that they produce is the same for all sizes of wood.  So why the chunks?  The chunks infuse more slowly, giving you more time to taste the changes going by.  They are also the easiest size to work with in making blends.  If you wanted to make a batch that was 70% Medium and 30% heavy toast, it is much easier to count off chunks than to start weighing out the smaller sized wood.  The chunks are not exactly the same size, but pretty close for making a blended batch.
